In-keeping with the format of Japanese restaurants, the menu comprises small plates, salads and cold dishes that lead into a selection of mains from sea and land, as well as a generous offering of side plates, noodles and rice. For first-timers, look no further than the Sumosan signatures to get a feel of the heart of the renowned restaurant; starting with the toro tartare with Oscietra caviar and tapioca crackers is a decadent and moreish no-brainer, followed by the wagyu sando served with a side of truffle fries to share. Adorn your table with more delights from the starters – roasted bone marrow topped with reimagined beef tartare is hearty and umami-rich while smoked yellowtail carpaccio with apple caramel dressing is a zingy palette cleanser.

Sumosan has an extensive menu of sushi, sashimi and rolls

It goes without saying that the sushi and sashimi selection at Sumosan is a culinary highlight; Sumosan presents an impressive offering that rivals the city’s best-loved Japanese institutions. From unagi, anago and hamachi sushi and sashimi to maki rolls for those preferring raw, cooked or vegetarian iterations, there is plenty to satisfy every kind of sushi lover, whether traditional or experimental.

Main courses are best ordered in multiples and shared to sample the best of the menu, namely 24-hour miso marinated black cod, grilled kamchatka king crab leg, grilled lamb chops and wagyu sirloin steak.
