Chef Célia Stoecklin Takes MOJEH Inside Fi'lia, Dubai's First Female-Led Restaurant

It’s not about breaking barriers - it’s about proving they never should have existed in the first place

There’s a rare kind of magic in dining that makes you feel at home while still indulging in something extraordinary. At Fi’lia, that balance is effortless. The scent of freshly baked focaccia, kissed by flames, drifts through the air. The pasta arrives glistening, swirled in slow-simmered sauces that taste like they’ve been perfected over generations. It’s a place where nostalgia and refinement exist in harmony - where every bite feels both familiar and elevated.

At the helm is Chef Célia Stoecklin, whose approach to food is as much about storytelling as it is about technique. “Food is emotional,” she says. “It’s not just about what’s on the plate; it’s about what it makes you feel.”

And at Fi’lia, you feel everything.

A Legacy Served on a Plate

For Chef Célia, food is deeply personal. She grew up watching her family cook, learning to trust her senses before she ever studied a recipe. “My grandfather always said, ‘If you cook with love, people will taste it,’” she recalls. “That’s something I carry with me every time I step into the kitchen.”

This philosophy defines Fi’lia’s menu, an Italian culinary heritage, passed down through generations. The recipes are divided:

Nonna – The classics, untouched by time. “These dishes are sacred. They don’t need reinvention - just respect.”

Mamma – Tradition refined. “It’s about elevating what we know, perfecting what we love.”

Figlia – A fresh take on heritage. “Cooking evolves, just like we do. This is where creativity comes in.”

It’s a beautiful duality: food that feels familiar yet exciting, steeped in nostalgia yet crafted with modern precision.

Redefining Power in the Kitchen

Fi’lia isn’t just about incredible food, it’s about changing the conversation around who gets to cook it. The restaurant is proudly female-led, a statement in an industry still dominated by men.

“For so long, fine dining has been a boys’ club,” Chef Célia says. “But women have always been the heart of the kitchen. Fi’lia is proof of what happens when we take that power back.”

Here, leadership is collaborative, creativity is encouraged, and excellence is the standard. It’s not about breaking barriers - it’s about proving they never should have existed in the first place.

"Dubai’s food scene is constantly evolving, and that’s part of what makes it so exciting. To stay inspired, I keep a close eye on what’s happening both locally and globally, and I always look for ways to bring fresh perspectives to our cuisine."

Where Comfort Meets Craftsmanship

Dining at Fi’lia is a journey of bold, unforgettable flavours. The Mozzarella starter combines creamy bocconcini with green gazpacho, beef prosciutto, and melon, offering a refreshing yet indulgent bite. The Crudo excites the palate with citrus-kissed yellowtail and prawn oil. "My travels across Italy’s different regions have been a huge source of inspiration, and each signature dish carries a piece of that journey. For example, our Carpaccio is a memory from my first trip to Venice in 2011, while the Limone dessert draws inspiration from the breathtaking Amalfi Coast."

"At Fi’lia, we are keeping the focus on the core ingredients: fresh vegetables, aromatic herbs, olive oil, and, of course, pasta. We also incorporate modern techniques like sous-vide cooking or precision heat in order to enhance textures and flavours. We love incorporating ingredients that are in season or have a unique quality that complements traditional Italian flavours. For example, we might bring in a touch of Japanese umami or incorporate locally-sourced, unexpected ingredients that work beautifully with Italian classics."

The Linguine all’Astice pairs sweet lobster with fresh pasta and marinara, brightened by lemon zest and basil. To finish, the Fi’liamisu reimagines tiramisu with creamy espresso syrup and milk foam, leaving a lingering sweetness. Each dish is a moment to savour.

“I want people to feel like they’re eating something made just for them,” Chef Célia says. “That’s the magic of comfort food.” And yet, this is comfort food with a passport. Rooted in tradition, refined for a global audience. “It’s food that stays with you, because it connects to something deeper - memories, home, love.”

An Invitation to Indulge

As Chef Célia puts it, “When guests come to Fi’lia, I hope they can travel through these dishes, experiencing the same emotions and wonder I felt as I explored Italy. It’s all about sharing those memories and giving them a taste of the places that have left such a profound impact on me.” Book now
