As London’s favourite celebrity haunt makes its debut in the Middle East, we speak to the esteemed chef director of Sexy Fish on what to expect from the glittery new Dubai outpost

Congratulations on the opening! Why did you decide to introduce Sexy Fish to Dubai? 

Dubai is perfect for Sexy Fish. The city and people are vibrant, innovative, contemporary and a little luxurious - I think Sexy Fish is all of that and more. 

How does the Middle Eastern outpost differ from its siblings in the likes of London and Miami? 

Every location stays true to the essence of the brand, and we always adapt to the culture and energy of each city. Sexy Fish Dubai will have its own distinct personality, drawing inspiration from the city’s luxury, creativity and diverse culinary influences, with a menu carefully curated to reflect both our signature dishes and new creations that cater specifically to the tastes of Dubai’s eclectic audience, from locals and expats to international visitors. 

Can you explain the menu? 

Our menu is based on Japanese flavours with a contemporary twist, and we use the finest ingredients from around the world. Think top-quality sashimi, nigiri, tartare and sushi, while our Robata is used to caramelise, braise or grill the best seafood and meat. And our absolute must-tries are our desserts, from our beloved cheesecake to our shaved ice or our Japanese Fruit selection. 

Are there any dishes specific to the UAE? 

Yes! We always love creating something unique that reflects the local culture and flavours while staying true to our style. We will have exciting new creations like BBQ iced scallop ceviche and thinly sliced turbot with brown butter ponzu & white truffle. We’ve got a few more surprises up our sleeve that we’re excited to bring to the city with our launch!

How is the drinks list looking? 

Our drinks list is shaping up beautifully! Xavier Landais and his team have done an amazing job. We’re thrilled to bring our UNITY menu to Dubai, which is a unique concept that allows guests freedom to choose the way they drink – they can select a single flavour profile, and then choose with or without alcohol or with low ABV. We’re also excited to introduce three exclusive flavour profiles specifically for Dubai: coconut, date and mandarin. 

And what about the interiors? 

They have been conceptualised by the renowned Martin Brudnizki Design Studio, so that should speak for itself! The restaurant features captivating pieces from world-famous artists like Damien Hirst – the most we’ve ever had in any of our restaurants – as well as bold colours and sophisticated design elements you will have to experience for yourself. 

If we could only order one dish, what would it have to be? 

If I had to pick one, it would have to be our grilled o toro with bone marrow, king crab and truffle – it marries playful, decadent, refined, umami flavours with the luxurious flavour of black or white truffle.  Sexy Fish is now open at Level 11 - Innovation One, DIFC, Dubai. Book now
